3 tablespoons butter
1/4 cup diced onion
5 chopped mushrooms
6 large eggs
2 tablespoons heavy cream
1 (15 oz) can Glory Foods Pinto Beans & Rice; drained well
1/2 cup shredded Colby (or other white) cheese
1 small avocado; diced
salt & pepper to taste
corn tortillas for toasted bread for serving
- Melt butter in a large skillet. Add mushrooms and onion; sauté for 2 minutes until onion is fragrant.
- In a separate bowl, whisk together the eggs and cream until frothy. Pour into the pan and scramble until eggs are just beginning to set. Add red beans & rice, cheese and avocado.
- Stir another couple of minutes until mixture is combined and the cheese has melted. Season to taste with salt & pepper and serve with tortilla or toasted bread, if desired.
