Pinto Beans and Rice Breakfast Scramble



  • 3 tablespoons butter
  • 1/4 cup diced onion
  • 5 chopped mushrooms
  • 6 large eggs
  • 2 tablespoons heavy cream
  • 1 (15 oz) can Glory Foods Pinto Beans & Rice; drained well
  • 1/2 cup shredded Colby (or other white) cheese
  • 1 small avocado; diced
  • Salt & pepper to taste
  • Corn tortillas for toasted bread for serving 


  1. Melt butter in a large skillet. Add mushrooms and onion; sauté for 2 minutes until onion is fragrant.
  2. In a separate bowl, whisk together the eggs and cream until frothy. Pour into the pan and scramble until eggs are just beginning to set. Add red beans & rice, cheese and avocado.
  3. Stir another couple of minutes until mixture is combined and the cheese has melted. Season to taste with salt & pepper and serve with tortilla or toasted bread, if desired.


Yield: 2-3 servings

Prep time: 5-6 minutes

Cook time: 6-7 minutes
