New Year’s Good Luck Blackeye Peas
1 tablespoons butter
1/3 cup diced white onion
1 rib celery; diced
2 cloves garlic; minced
2 teaspoons Cajun seasoning
1/4 cup carrot juice
1 (5.5 oz) can tomato or V-8 juice)
2 (14.5 oz) cans low sodium chicken broth
2 (14.5 oz) cans Glory Seasoned Blackeye Peas (do not drain or rinse)
1-1/4 cups cooked (shredded or cubes) ham
1-2 teaspoons fresh lemon juice
Melt beet in a large saucepan and sauté onion, celery and garlic over low heat for 3-4 minutes. Stir in seasoning, carrot juice and tomato juice and increase heat to medium.
Add chicken broth, black eye peas and ham; allow to simmer for 20 minutes. Remove from heat and stir in lemon juice.
Serve with cornbread, if desired.
Yield: 3-4 servings
