Hot Double Bean and Cranberry Side Dish

 

Ingredients

  • 1 tablespoon butter
  • 1/2 cup chopped white onion
  • 2 cloves minced garlic
  • 2 tablespoons chopped sun dried tomatoes 
  • 1/2 cup thinly sliced and carrot circles
  • 1/2 teaspoon dried sage 
  • 1/2 cup vegetable broth
  • 1/2 cup dried cranberries
  • 1 (14.5 oz) can Glory Foods Great Northern Beans
  • 1 (15 oz) can garbanzo beans; drained
  • salt & pepper to taste

Directions

  1. Melt butter in a medium saucepan.
  2. Add onion and sauté for 3 minutes.
  3. Stir in garlic, sun dried tomatoes, carrots, sage and broth. 
  4. Lower heat and simmer for 10 minutes.
  5. Add cranberries and beans; cook 5 minutes more.
  6. Season with salt & pepper to taste.
