Sensibly Seasoned Vegetarian Black Bean Soup


Serves: 9

Ingredients:

1 tsp. Olive oil
1/2 cup White onion, diced 1/4"
1/4 cup Red bell pepper, diced 1/4"
1/4 cup Green bell pepper, diced 1/4"
1/4 cup Celery, diced 1/4"
1 tsp. Garlic, minced
1/4 tsp. Chili powder
1/4 tsp. Cumin, ground
1/4 tsp. Black pepper, ground
1 qt. Vegetable broth, low sodium
2 cans 14.5 oz. Glory Foods® Sensibly Seasoned™ Black Beans
1/4 cup Cooking Sherry 
1/4 cup Green onions, sliced 1/4"
1 Tbsp. Cilantro, chopped

Directions

Place oil in a two-quart saucepan. Add onions, red and green bell peppers, and celery.
Turn heat to medium and saute the vegetables, add a little of the vegetable stock, and cook until the vegetables are softened.
Add garlic and seasonings. Saute briefly until the garlic begins to brown.
Add Glory Foods® Sensibly Seasoned™ Black Beans and vegetable broth to the pan. Heat until soup is simmering.
Simmer for 15 minutes.
Add the sherry, green onions and cilantro, and stir.
Serve immediately.
