Stefanie’s Carrot Cake Muffins


Serves: 18

Ingredients:

3 cups Glory Foods® Honey Carrots, sliced and diced
2 cups Flour, all purpose
1 Tbsp. Baking powder
2 tsp. Baking soda
1/8 tsp. Salt
1 tsp. Ground cinnamon
4 ea. Eggs
1 cup Applesauce
3/4 cup Brown sugar

Directions

Preheat oven to 350 degrees.
Grease muffin cups.
In a large bowl, sift together flour, baking powder, baking soda, salt and cinnamon.
In a separate bowl, combine eggs, applesauce and brown sugar, and beat all ingredients well.
Combine egg mixture and flour mixture and mix well. 
Fold in sliced and diced Honey Carrots. 
Spoon batter into prepared muffin cups and bake for 20 minutes in preheated oven.
