Fried Sweet Potato Pies


Serves: 2

Ingredients:

2 15 oz. Glory Foods® Sweet Potato Casserole
1 Tbsp. Vegetable oil
2 tsp. Sugar
1 ea. Egg yolk
1/4 cup Brown sugar
1 tsp. Cinnamon
1/4 tsp. Nutmeg
1 box Ready-made pie crusts
Vegetable oil for frying, as needed
1 cup Powdered sugar
2 or 3 Tbsp. Milk
1 tsp. Bourbon, if desired

Directions

Place the sweet potato casserole in a mixing bowl. Add the egg yolk, cinnamon, nutmeg, sugar and brown sugar. Mix well.

Roll out both pieces of pie dough onto a floured surface. Cut 12, 4-inch squares and lay them out onto a parchment-lined cookie sheet.

Place about 1 Tbsp. of the filling in the center of each 4-inch pastry square, and fold in half sealing the edges thorougly with a fork.
In a deep-fryer or heavy-bottomed pot, heat enough oil to come halfway up the sides of the pot heat oil to 350 degrees F.

Carefully place 2-3 pies in the hot oil, stirring occasionally for browning, and fry until golden brown or about 3 to 4 minutes.
Remove the pies from the oil and drain on paper towels.
Sprinkle the hot pies with the sugar, and repeat until all pies are fried.

In a mixing bowl, mix until smooth the powdered sugar, milk and bourbon if desired.

Drizzle the frosting over the hot pies and serve immediately.
