Arugula, Green Bean & Potato Salad with Walnuts

Seasoned Green Beans & Potatoes mixed with some healthy greens....arugula and spinach! Not only is this recipe healthy but it's also quick and easy to put together.

 

Ingredients

  • 3 cups baby arugula - 2 cups baby spinach
  • 1 (27 oz) can Glory Foods Seasoned Green Beans & Potatoes; drained and chilled
  • 1/2 cup prepared Buttermilk Ranch Dressing
  • 2 tomatoes; quartered
  • 1/3 cup toasted walnut pieces
  • 1 teaspoon dried parsley
  • Corn muffins for serving

Directions

  1. Divide rinsed and chilled lettuces among 4 plates.
  2. Top with green beans & potatoes followed by a few
    spoonfuls of dressing. - Arrange tomato wedges around salad; sprinkle with toasted walnuts and parsley.
  3. Serve with fresh corn muffins.
