Fresh Greens with Oranges, Blueberries & Almonds

Servings: 6-8 servings



1 (10 oz) bag Glory Foods Organic Kale
1 bunch fresh spinach; washed and stems removed
2 oranges; peeled, sectioned and cut into pieces
1 small basket fresh blueberries
2 tablespoons fresh lemon juice
1/4 cup extra virgin olive oil
1 teaspoon honey
1/3 cup slivered almonds
salt & pepper to taste

1 (10 oz) bag Glory Foods Organic Kale

2 tablespoons fresh lemon juice
1/4 cup extra virgin olive oil
1 teaspoon honey
1/3 cup slivered almonds
salt & pepper to taste



Directions:

  1. Place greens, oranges (along with juice from cutting board), blueberries in a large bowl.
  2. In a separate bowl, stir together the lemon juice, olive oil and honey; pour over salad and toss to coat greens.
  3. Season with salt and pepper to taste then sprinkle with almonds before serving.

*Moist dried blueberries can be used in place of fresh if unavailable in your area this time of the year.

Yield: 6-8 servings
