Green Bean Casserole: A Tradition Meets Diversity

You know its name, and it’s intimately acquainted with you in some way.

You’ve probably met it or eaten it at least once in your lifetime.

Green bean casserole has that type of universal appeal.

Often green bean casserole is concocted with cream of mushroom soup, milk, pepper, fresh or frozen green beans and crispy slithers of fried onion. This is the version that usually pops up during holiday meals and at potlucks.

Yet, green bean casserole can be so much more if creativity is allowed a little more room to spread its culinary wings.

There are numerous versions of green bean casserole that push the common manifestation aside and embrace fresher alternatives.

Some cooks conjure up Mediterranean and Mexican influences and cook their green bean casseroles with jalapenos, tomato sauce, garlic and sumac spice among other ingredients for a delicious casserole that pairs nicely with lamb and lemon potatoes.

Others prepare green bean casseroles by swapping out the typical cream of mushroom soup with their preferred enhancements including Alfredo sauce, salsa and cheddar cheese soup.

There are even people gutsy enough to ditch crispy onions as the topping. Some decide to use panko (Japanese bread crumbs frequently used in tempura dishes) or slithered almonds instead for a crunchy but healthier version of this perennial favorite.

Here is one version of a modern green bean casserole straight from the kitchen of Glory Foods® that is easily prepared in the microwave.

Glory Foods® Sensibly Seasoned™ Green Beans in Tomato Garlic Sauce

Serves 6

2 (15-ounce) cans Glory Foods® Sensibly Seasoned String Beans, drained
1 (14-ounce) can Tomatoes with Italian seasoning, diced and drained
3 tablespoons Olive Oil
2 tablespoons Garlic, peeled and minced

Place garlic and oil in a two-quart, microwave-safe casserole dish, cover and microwave on high for 2 minutes.
Carefully remove hot casserole dish from the microwave and add Glory Foods® Sensibly Seasoned Green Beans and tomatoes and mix well.
Cover and return to the microwave. Cook for 3 to 5 minutes on high.
Carefully remove hot casserole dish from the microwave and let sit for 2 minutes and serve.
