Black-Eyed Peas Hash

Fall is here, and cooler weather ultimately brings a desire for hearty, but not heavy, meals.

David Francis, executive chef of Glory Foods, Inc., created a new recipe that fits the bill for a fall meal that is satisfying without being overwhelming.

Black-Eyed Peas Hash is quick, easy and delicious alone or served with a side of rice.

Here is what you need and directions:

8-ounces ground turkey sausage
1 cup chopped green onion
1 cup chopped fresh tomato
1 cup cubed red bell pepper
1 medium cooked Yukon gold potato, diced
1/4 cup water
2 teaspoons chopped fresh thyme
2 teaspoons cider vinegar
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
1 (15-ounce) can Glory Foods® Black-Eyed Peas

Heat a large nonstick skillet over medium-high heat. Add ground sausage, sauté 4 minutes or until lightly browned, stirring occasionally.
Add green onion, tomato, red bell pepper and cooked potatoes, sauté 4 minutes, stirring frequently. Add water and remaining ingredients. Simmer 2 minutes or until Glory Foods Black-Eyed Peas® are thoroughly heated.
