Apples are worth the Bite

Apples are autumn’s favored fruit, although they are good in every season.

When choosing apples, you should pick ones that are firm with smooth, unbroken skins. Badly bruised apples or decaying apples should be tossed right away because they release amounts of ethylene gas that speeds spoilage of nearby fruits. (Hence the adage “one bad apple spoils the whole bunch.”)

Red delicious apples, for example, are sweet but bland and have a soft to mealy texture. They are popular for eating, but they are not candidates for pies like Pippin (Newton) and Rome apples.
