Sensibly Seasoned Vegetarian Black Bean Soup

Serving Size: 1 cup
Ingredients
1 tsp. Olive oil
1/2 cup White onion, diced 1/4"
1/4 cup Red bell pepper, diced 1/4"
1/4 cup Green bell pepper, diced 1/4"
1/4 cup Celery, diced 1/4"
1 tsp. Garlic, minced
1/4 tsp. Chili powder
1/4 tsp. Cumin, ground
1/4 tsp. Black pepper, ground
1 qt. Vegetable broth, low sodium
2 cans 14.5 oz Glory Foods® Sensibly Seasoned Black Beans
1/4 cup Cooking Sherry 
1/4 cup Green onions, sliced 1/4"
1 Tbsp. Cilantro, chopped
Directions
  1. Place oil in a two-quart saucepan. Add onions, red and green bell peppers and celery.
  2. Turn heat to medium and saute the vegetables, add a little of the vegetable stock and cook until they are softened.
  3. Add garlic and seasonings. Saute briefly until the garlic begins to brown.
  4. Add Glory Foods® Sensibly Seasoned Black Beans and the vegetable broth to the pan. Heat until soup is simmering.
  5. Simmer for 15 minutes.
  6. Add the sherry, green onions and cilantro and stir.
  7. Serve immediately.
