Collard and Sausage Soup
Serves: 10-12
Ingredients
1 27 oz. can Glory Foods® Collard Greens
1 Tbsp. Olive Oil
1 cup Yellow onion, diced 1/4"
2 cloves Garlic, minced
2 ea. Potatoes, peeled and diced 1/2"
2 cups Chicken stock
1/2 lb. Italian sausage, cooked and sliced 1/4" thick
Directions
  1. Place olive oil in a saucepan over a low flame.
  2. Add the onions and garlic, and cover. Cook until translucent, stirring occasionally. Make sure garlic and onions do not burn.
  3. Add potatoes and all remaining ingredients. Simmer for 15 to 20 minutes, or until potatoes are tender.
  4. Serve hot.
