Sweet and Spicy Grit Cakes

Serving Size: 1 cake
Ingredients
2 cups Water
1 cup Heavy cream
1 Tbsp. Glory Foods® Smoked Ham Savory Accent Base
1 cup White cornmeal grits
2 Tbsp. Glory Foods® Spicy Vidalia® Hot Sauce
Cooking spray, as needed
Directions
  1. Coat an 8" x 11 1/2” baking pan liberally with cooking spray.
  2. Mix water, cream, Glory Foods® Spicy Vidalia® Hot Sauce and Glory Foods® Smoked Ham Savory Accent Base in a four-quart saucepan. Bring to a boil.
  3. Pour grits into the boiling liquid. Reduce heat to medium and cook, stirring constantly for 5 to 7 minutes. The grits should be soft and very thick in consistency.
  4. Pour the grits into the prepared baking pan. Refrigerate at least 2 hours. The grits should be stiff and cold before final cooking. Cut the grits into 8 equal pieces.
  5. Heat a 12"-wide nonstick pan or griddle to 400 degrees and spray liberally with cooking spray.
  6. Saute the grit cakes a few at a time in the skillet for about 2 minutes on one side before turning. Turn and continue cooking until the other side is nicely browned and heated through.


Serving Suggestions:  Use this recipe to replace biscuits or grits for breakfast. Makes a great side dish with pork, chicken and ham entrĂ©es.
