Fresh - Sweet Potato Stuffing
Serves: 6-8
Ingredients
1 16 oz. Bag Glory Foods® Sweet Potatoes
1 Cup Water
1 Tbl. Butter
3/4 Cup Onion, diced 1/4"
1/4 Cup Celery, diced 1/4"
1/2 tsp. Salt
1/2 tsp. Black Pepper, ground
1 Cup Apple, Granny Smith, peeled, diced, 1/4"
1/4 Cup Apple Cider
1/8 tsp. Cinnamon, ground
1/8 tsp. Nutmeg, ground
1/8 tsp. Cloves, ground
1 Cup Bread Crumbs, plain
1/4 Cup Apple Cider
2 Tbl. Butter, melted, cooled
Directions
  1. Place Glory Foods® Sweet Potatoes in to a two-quart round, microwave-proof, glass casserole dish.
  2. Add the 1 cup of water, cover and place in the microwave.
  3. Cook on high for 8 minutes or until the sweet potatoes are tender.
  4. Carefully remove the casserole dish from the microwave and drain all the water.
  5. Add the 1 Tbl. of butter, vegetables, salt, pepper, 1/4 cup apple cider and cover, return to microwave on high for 4 minutes.
  6. Carefully remove the casserole dish from the microwave and add the remaining seasonings and apples. Gently stir to incorporate, cover and return to microwave on high for 4 minutes.
  7. Carefully remove the casserole dish from the microwave and add the bread crumbs and the remaining 1/4cup of apple cider. Stir gently to combine, dot with 2 Tbls. of butter, cover and let stand for 5 minutes before serving.
