Apple Citrus Bread
Serves: 18 (9 per pan)
Serving Size: 1 slice
Ingredients
4 Cups All purpose flour
2 tsp. Baking powder
2 tsp. Baking soda
1 1/2 tsp. Salt
2/3 Cup Vegetable shortening
2 Cups Granulated sugar
3 Ea. Eggs, large
1 tsp. Orange zest (grated orange rind)
2/3 Cup Orange juice
1 15 oz. Can Glory Foods ® Sweet Traditions Fried Apples, drained (liquid reserved) individual slices cut in half
1 1/2 Cups Raisins
1/2 Cups Walnuts, coarsely chopped

Directions
  1. Preheat oven to 350°F.
  2. Grease two 9" x 5" x 3" glass or nonstick metal loaf pans.
  3. Sift together the flour, baking soda, baking powder and salt.
  4. Cream the shortening and the sugar in a mixer until light and fluffy. With the mixer running add the eggs one at a time and continue mixing until combined.
  5. Combine the orange zest, juice, fried apples, raisins, walnuts and add to the sugar egg mixture.
  6. Add the dry ingredients and mix until everything is just moistened.
  7. Divide the finished dough between the two prepared loaf pans.
  8. Bake for 40-50 minutes and check for doneness by inserting a toothpick or wood skewer into the center of the loaves. When fully baked it should come out clean.
  9. Remove from the oven and cool, then slice and serve.
