Place the diced bacon and diced onion in a large non-stick saute pan. Cook over |

moderate heat stirring occasionally until the bacon is starting to brown and the onions are soft. |

Stir in the pepper and nutmeg, and immediately add one cup of the milk. |

Heat until simmering. |

Mix the cornstarch with the remaining 1/4 cup of milk. Stir the cornstarch mixture |

into the simmering milk, stirring constantly. Heat until the sauce thickens. |

Stir the drained spinach into the sauce. Mix until well combined. |

Heat stirring occasionally until bubbling. Stir in the parmesan cheese. |

Pour into a serving dish and serve immediately. |
