Fresh - Sweet Potato Pie

1         16 oz. Bag

2         tsp.
3/4      tsp.
1/4      tsp.
1/4      tsp.
1/4      tsp.
1         ea.

 

Glory Foods® Sweet Potatoes
Water
Eggs, large
Sugar
Evaporated Milk
Butter, melted, cooled
Lemon Juice
Vanilla Extract, pure
Cinnamon, ground
Nutmeg, ground
Salt
Pie Shell, 9", prepared, unbaked

1.




Preheat oven to 400 degrees.

Place the Glory Foods® Sweet Potatoes in to a 2 quart glass, round, microwave proof, casserole dish.
3.




Add the 1 cup of water, cover and place in the microwave.
4.




Cook on high for 12 - 14 minutes or until the Glory Foods® Sweet Potatoes are tender.
5.




Carefully remove the casserole dish from the microwave and drain all the water.
6.




Mash the Glory Foods® Sweet Potatoes till smooth and allow to cool to room temperature.
7.




Mix the remaining ingredients in a separate mixing bowl until thoroughly combined.
8.




Combine the mash Glory Foods® Sweet Potatoes and above mixture, and pour into the unbaked pie shell.
9.




Place the filled pie shell on to a cookie sheet and place in the oven and bake for 20 minutes.  Reduce heat to 325 degrees and continue to bake until center is firm.













Note:  For conventional cooking method boil the Glory Foods® Sweet Potatoes in boiling water until tender.  Drain the water and follow the above directions starting at step 6.

Note: For conventional cooking method boil the sweet potatoes and in boiling water until tender.  Drain water and thoroughly mix the hot sweet potatoes and vegetables with the remaining ingredients.  Place into a 9 "X 9" casserole dish, dot with 2 Tbls. of butter and bake at 350 degrees for 35 to 45 minutes.
