Refried Black Bean Quesadiila

Qty Unit Ingredient

 1 tsp. Canola oil

1/4 Cup Red Pepper, cut 1/8 inch strips

1/4 Cup Green Pepper, cut 1/8 inch strips

1/4 Cup Red onion, cut 1/8 inch strips

1.5  Cup  Glory Foods® Recipe: Sensibly Seasoned Refried Black Beans 

1/4  Cup  Cheddar cheese, shredded

2 ea. 8 in.
Tortilla, whole wheat

1/4  Cup Salsa, store-bought

2 Tbl. Sour Cream, fat free









Directions:





1.  Preheat your oven to 350°

2. Heat a non-stick skillet and add the oil and all of the vegetables. Saute stirring occasionally until the vegetables are slightly softened. Remove and set aside. 

3.  Place a piece of parchment or a silicone baking sheet on a cookie sheet. Lay the tortillas flat on the cookie sheet. 

4. Spread the refried beans over 1/2 of each of the tortillas. Top the beans with 1/2 of the cheese and vegetables. Fold into a half moon shape. 

5.  Bake for 15-20 minutes or until the cheese is melted and the refried beans are hot. 

6.  Remove from the oven and cut each tortilla into 2 or 3 pie shaped wedges. 

7. Arrange on a platter and garnish with salsa and fat free sour cream.
