Fresh - Sweet Potato Stuffing

Serves 6-8

Glory Foods® Sweet Potatoes
Water
Butter
Onion, diced 1/4"
Celery, diced 1/4"
Salt
Black Pepper, ground
Apple, Granny Smith, peeled, diced, 1/4"
Apple Cider
Cinnamon, ground
Nutmeg, ground
Cloves, ground
Bread Crumbs, plain
Apple Cider
Butter, melted, cooled

Place the Glory Foods® Sweet Potatoes in to a 2 quart glass, round, microwave proof, casserole dish.

Add the 1 cup of water, cover and place in the microwave..

Cook on high for 8 minutes or until the sweet potatoes are tender.

Carefully remove the casserole dish from the microwave and drain all the water.

Add the 1 Tbl. of butter, vegetables, salt, pepper, 1/4 cup apple cider and cover, return to microwave on high for 4 minutes.

Carefully remove the casserole dish from the microwave and add the remaining seasonings and apples.  Gently stir to incorporate, cover and return to microwave on high for 4 minutes.

Carefully remove the casserole dish from the microwave and add the bread crumbs and the remaining 1/4 cup of apple cider.  Stir gently to combine, dot with 2 Tbls. of butter, cover and let stand for 5 minutes before serving.

Note: For conventional cooking method boil the sweet potatoes and in boiling water until tender.  Drain water and thoroughly mix the hot sweet potatoes and vegetables with the remaining ingredients.  Place into a 9 "X 9" casserole dish, dot with 2 Tbls. of butter and bake at 350 degrees for 35 to 45 minutes.
