Glorious Oyster Dressing

Glory Foods® Homestyle Cornbread Mix, prepared
Vegetable Oil
Oyster, shucked, reserve liquid
Salt
Pepper
Flour
Chicken Broth
Onion,dice,1/8"
Green Bell Pepper, dice, 1/4"
Eggs
Poultry Seasoning
Salt
Pepper

Directions:

1.           Preheat oven to 350 degrees.
2.           In a small pot heat 3 cups of oil. Sprinkle the oysters with salt and pepper (1/4 tsp),
              coat with flour, and fry until dark golden brown. Drain on paper towel and set
              aside.
3.           Boil the onion, celery, and green bell pepper in the chicken broth until tender.
4.           In a large mixing bowl, crumble the cornbread and sprinkle with seasonings.
              Add the eggs and the oyster liquid and mix thoroughly. Pour the chicken broth
              with vegetables into the bread mixture and blend.  Chop the oysters in large
              chunks and fold into the dressing.
5.           Place entire mixture into a 8x11.5x2 glass casserole dish and bake about 1 hour
              or until the dressing is firm, but not dry.
