Curried Kale and Sweet Potatoes

Serves 8  (1/2 cup Servings)

1      27 oz. Can Glory Foods ® Kale
1      15 oz. Can Glory Foods ® Cut Sweet Potatoes in Light Syrup
1      Tbl. Olive oil
1/2      Cup Onions, cut in thin julienne
1/2       Cup Red bell pepper, cut in thin julienne
1      tsp.  Garlic, minced
1      tsp.  Curry powder 
1/4      tsp.  Red pepper flakes
1      Tbl. Lemon juice
1      Tbl. Apple cider vinegar




Directions:



1.      Place the olive oil, onions and bell peppers in a 10-12" saute pan.
2.      Saute, stirring occasionally, until the onions and peppers are softened and starting to brown. 
3.       Place the garlic in the pan and saute briefly. Add the curry powder and red pepper flakes to the       pan.
4.      Place the kale, sweet potatoes, vinegar and lemon juice in the pan. 
5.      Heat stirring gently until the kale and sweet potatoes are heated through and the liquid is                bubbling
6.       Serve immediately.
